Fruit & Seed Slice

Fruit & Seed Slice
One recipe that’s great any time of the year is this healthy and delicious slice. For a Christmas treat, add melted chocolate on the top.

Ingredients
3 cups mixed dried fruit (or your own nut and dried fruit mix)
1 cup seeds of your choice
2 tbsp rice flour
3 eggs
250g dark chocolate, melted

Method

  1. Preheat oven to 180C degrees and line a Lamington tin with baking paper.
  2. Combine dried fruit, nuts and seeds with rice flour and mix to coat well.
  3. Lightly beat eggs to combine and stir gently into mix.
  4. Spread into prepared Lamington tin and press lightly using an egg slice.
  5. Cook for about 30mins, or until lightly toasted.
  6. Remove from oven and allow to cool before pouring melted chocolate over the top.
  7. When chocolate is set, cut into squares.
